Had a long productive chat with Twin yesterday, haven't talked to her in ages (but hey, best friends do not necessarily have to talk everyday to be best friends!). Felt a whole lot better after sharing stories/experiences to help me in the decision which i've been harping on the past two nights, apparently twins being twins, we're in the same boat(situation) most of the time.

Anyhooooooo, i've decided to take up the challenge of meal prepping once again. Have been stuck with pan-fried chicken boobies or fruit salad for the past month that i got sick of it, hence it didn't last. Then again, one does not simply give up.

So with another go, i settled with whole wheat semolina pasta tossed with extra virgin olive oil. Accompanied with stir-fry beef and honey baked ham + extra scrambled eggs for my dinner during work tonight. Huehue, rather satisfactory for a first try though. #icandothis

Not forgetting, some breakfast bars i baked a few days back cause i got sick of Alpen Muesli' with Greek Yoghurt and Chocolate milk for breakfast every other day.

It's rather simple actually. Used the exact same ingredients i usually have for breakfast, just that i placed them together and baked it this time.
Recipe taken from bethehappysoul.com
Ingredients:
2 cups muesli w/ dried fruit
2 tbsps unbleached white flour
1 cup unsweetened almond milk
1 cup diced bananas
1 cup diced strawberries
1 tsp baking powder
1 large whole egg
1/4 cup pitted dates, microwaved to gently melt
extra strawberries, sliced for topping

Step 1: Mix all the wet ingredients together
Step 2: Mix all the dry ingredients together
Step 3: Mix the dry ingredients to the wet.
Step 4: Bake for 45 minutes at 350 degrees. (well, i suggest you do some estimation cause due to time constraints i only baked mine for 30mins and it was alright. A little moist on the inside)
